If you know, I love Copycat Recipes from restaurants.Shake Shack released their secret CHEESE SAUCE recipe and I am completely obsessed . This sauce would go great with just about anything! But obviously these recipes need some substitution and improvisation and I have done here according to taste. The best part this is so fresh and homemade with just basic ingredients laying around your house.

Step 1
Heat the oil in a large saucepan over medium. Add the onions, jalapenos, peppercorns, and cook, stirring often, until the onions are translucent, about 5 minutes. Add the vinegar, and cook until liquid has almost completely evaporated, about 5 minutes. Add salt, Stir in the cream. Remove the pan from the heat.
Step 2
Meanwhile, put the sharp Cheddar and cheddar cheeses into a large heatproof bowl. Pour the hot cream through a strainer (to remove the solids) over the cheeses, stirring until the cheese melts and the sauce is smooth, about 3 minutes. And fully melts on double boiler until thin string like consistency. Sauce will keep, covered and refrigerated, for up to 1 week. You can easily reheat the sauce in a microwave or over a pot of gently simmering hot water and serve immediately.
