Instructions

Step 1
1. Cook unpeeled garlic cloves in a cast iron skillet over medium heat, stirring occasionally until soft, 12 to 15 minutes
Step 2
2. Let cool, discard the skins and mash the garlic until smooth
Step 3
3. Melt butter in a medium saucepan over medium heat. Whisk in flour until combined. Gradually whisk in warm milk until smooth. Cook, whisking constantly until thickened, 6 to 8 minutes
Step 4
4. Reduce heat to low, whisk in mashed garlic, parmesan cheese, salt and pepper
Step 5
5. Cook, whisking constantly until the cheese is melted and the mixture is smooth
Step 6
6. Toss with pasta or use as a pizza sauce
