Ingredients: 1 white onion (finely diced); 1 stalk celery (finely sliced); 4 cloves garlic (minced); 200 g winter chanterelles; 1 tsp fresh thyme; 1 tbsp fresh tarragon (minced); 1 tbsp dried mushroom powder (see notes); 300 g risotto rice (arborio); 1.1 litres mushroom stock (see notes); 1 cup frozen peas; 1 tbsp butter (we use Naturli); 175 ml white wine; ½ tbsp extra virgin olive oil
