Instructions

Step 1
Wash the watermelon rind thoroughly to remove any dirt or debris.
Step 2
Cut off the green skin of the watermelon rind, leaving only the white part.
Step 3
Cut the white rind into small pieces or cubes.
Step 4
In a blender or food processor but preferably a juicer add the watermelon rind pieces. Juice using the juicer. If using a blender, blend until smooth and well combined.
Step 5
Place a fine-mesh strainer or cheesecloth over a large bowl or pitcher to strain the juice. Pour the blended mixture into the strainer and press it gently to extract the juice. Discard the solids left in the strainer.
Step 6
Add the lime or lemon juice to the strained juice and mix well.
Step 7
Taste the juice and add a sweetener of your choice if desired. Start with a small amount and adjust according to your preference.
Step 8
Refrigerate the juice for at least an hour to chill.
Step 9
Serve the watermelon rind juice over ice cubes if desired.
