A summer to-go-to. The tart tastes great whether it’s served hot, warm, or cold! Takes about 2 zucchini. Added some parm overtop. Easy to make. Easy to pre-make, have the flight in the fridge or freezer till needed. Zuccini can be pre-cut the night before or morning of.
