One Pot Copycat Trader Joe's Butternut Squash Mac & Cheese

Have you tried the frozen butternut squash mac & cheese at Trader Joe's? If so, you probably know it's delicious. But this version is EVEN better. It's saucier, cheesier, more flavorful, and you aren't limited to the small container.

Ingredients
4 servings
½ tspgarlic powder
¼ tspnutmeg
¼ tspcayenne
¼ tspsalt
¼ tsppepper
½ tspFresh Thyme
Can use dried but use about 1/3 the amount
½ tspFresh Rosemary
Can use dried but use about 1/3 the amount
1 tbbutter
1 tbflour
1.5 CWater
1.5 CMilk
I used whole milk
12 OzShort Cut Pasta
I used rigatoni, use more or less pasta depending on how much sauce you prefe
0.5 CCheese
Freshly grated, I used cheddar gruyere
1 ContainerPumpkin 4 Cheese Dip
Instructions
Step 1
Combine all seasonings in a small bowl and set aside.
Step 2
Heat butter in a dutch oven or large saucepan over medium heat.
Step 3
Add flour and combine with the butter. Stir continuously for about 3 minutes.
Step 4
Add water, milk, seasoning mix, and uncooked pasta.
Step 5
Let the liquid come to a boil and then turn down to medium-low heat and simmer until pasta is al dente.
Step 6
Once al dente, grate cheese and add to the pasta. Spoon in the pumpkin dip. Mix everything until combined.
