1 lbShanghai noodles
sub udon

0.5Taiwanese cabbage
sliced into 1/2" ribbons

2 cupsshiitake mushrooms
sliced

4scallions
whites only, cut into 2" pieces

0.5 lbground pork

1 tspwhite pepper

1 Tbsplight soy sauce

½ Tbspdark soy sauce

1 Tbspshaoxing wine

2 tspsugar

2 Tbspoyster sauce

2 Tbsplight soy sauce

1 Tbspdark soy sauce

1 tspsugar
Instructions
Step 1
Marinate pork in white pepper, light soy sauce, dark soy sauce, Shaoxing wine, and sugar for 15 minutes.
Step 2
Cook noodles 3-4 minutes less than package directions; drain and rinse under cold water.
Step 3
Fry pork in a hot pan over medium high heat with neutral oil until water evaporates and pork is golden brown; remove into a bowl.
Step 4
Sauté vegetables until cabbage is wilted, then deglaze with 2 tbsp Shaoxing wine.
Step 5
Mix together oyster sauce, light soy sauce, dark soy sauce, and sugar for your sauce.
Step 6
Add back noodles, pork, and pre-mixed sauce into pan with vegetables; mix together and cook for 3-4 minutes over medium high heat.
Step 7
Finish with sesame oil & enjoy!
