🇭🇺 Chicken al Limone over Linguine with Sautéed Spinach

Instructions

Step 1
Fill lg. pot with salted water; bring to boil. Add linguine & cook (8-9 min.), stirring to prevent sticking, until al dente. Reserve 1C cooking water, then drain pasta.
Step 2
Pat chicken dry. Add lemon zest, chicken, 1T lemon juice, 2t garlic, 2T oil, 1t salt, & ¼t pepper; toss to coat chicken. Let marinate until step 4.
Step 3
Heat 2t oil in med. skillet over med.-high; add remaining garlic & cook (30 sec.) until fragrant. Add spinach; season with salt & pepper. Cook (2 min.) until just wilted. Transfer to a plate & cover to keep warm. Wipe out skillet.
Step 4
In same skillet, heat 2t oil over med.-high. Add chicken; cook, turning once, until lightly browned & cooked through (4–5 min.) Transfer chicken to bowl.
Step 5
In liquid measuring cup, whisk to combine broth concentrate, remaining lemon juice, & ¾C pasta water.
Step 6
Add broth mixture and 2T butter to same skillet, stirring to melt. Add linguine, chicken, & any juices. (Add 1T pasta water at a time, stirring, until sauce reaches desired consistency.)
Step 7
Serve chicken, linguine, sprinkle parsley, & Parmesan with sautéed spinach alongside. Enjoy!
