Chicken Stuffing Bake

I used .5 cup frozen chopped onion and 1 cup of frozen carrots and peas, and skipped the broccoli. It was a delicious way to use up cooked chicken/turkey with items that I normally have on hand.

I replaced the onion and carrot with cauliflower. I added garlic and onion powder to the seasonings. This casserole was a hit! I will definitely make this again.

Husband did not like it. He has an aversion to anything “mushy”. I thought it was great and it reminded me of a chicken pot pie.
