Protein-Packed Baked Chicken Asteroids with Greek Yogurt Honey Mustard
Reheating: For best results, reheat leftovers in a 180°C oven for 10 minutes rather than microwave to maintain crispness.

Chicken Base
Crunchy Coating

1 ½ cupspuffed quinoa

¾ cuphemp seeds

2 tspgarlic powder

1 tsponion powder

3 Tbspblack and white sesame seeds

⅓ cuppolenta
cornmeal

½ tspsalt

½ cupchickpea flour

1 tspchicken stock powder
low sodium

50gparmesan cheese
grated

2whole eggs

1egg white
whisked

2 Tbspolive oil
for spraying/brushing
High-Protein Honey Mustard Dip
Instructions
Step 1
Preheat oven to 200°C. Line a large baking sheet with parchment paper.
Create Coating Mixtures
Step 2
In a shallow bowl, combine puffed quinoa, hemp seeds, sesame seeds, and polenta. Mix well.
Step 3
In a second bowl, combine chickpea flour, chicken stock powder, garlic powder, onion powder, salt and Parmesan cheese.
Step 4
In a third bowl, whisk together the whole eggs and extra egg white.
Form & Coat Chicken
Step 5
Dip each chicken pieace first in the chickpea flour mixture, then in the egg wash, and finally coat thoroughly in the quinoa-seed mixture, pressing gently to adhere.
Step 6
Place coated asteroids on the prepared baking sheet, leaving space between each piece.
Step 7
Spray or brush the tops lightly with olive oil.
Bake
Step 8
Bake for 22-25 minutes, turning halfway through, until golden brown and internal temperature reaches 74°C.
Step 9
For extra crispness, switch to grill/broil setting for the final 2 minutes.
Prepare High-Protein Dip

While asteroids are baking, blend cottage cheese until smooth using a blender or food processor.
Step 11
In a bowl, combine Greek yogurt, smooth cottage cheese, both mustards, lemon juice, honey, salt, paprika, and vinegar.

Whisk until completely smooth and creamy. Transfer to a serving dish and refrigerate until ready to serve.
Serve

Allow asteroids to cool slightly before serving alongside the high-protein honey mustard dip.

Garnish with additional hemp seeds if desired.
