Ingredients: • 3 cups all purpose flour; • 2 pinches of salt; • 1 cup lard; • 6 – 8 tablespoons cold water; • 2 tablespoons olive oil; • 1 small onion, diced; • 3 garlic cloves, minced; • 1 pound ground pork; • 1 pound ground beef; • 1 pound ground veal; • 2 medium potatoes, mashed (see note); • 1 1/2 teaspoons dried thyme; • 1 – 1 1/2 teaspoon cinnamon (to taste); • 1/4 teaspoons ground allspice; • 1/8 teaspoon ground cloves; • 2 teaspoons coarse salt; • 1/2 teaspoon ground pepper; • 1/4 – 1/2 cup beef broth (see note); • 1 – 2 tablespoons flour (see note); • 1 egg for egg wash
