Instructions
Step 1
Preheat the oven to 400F.
Step 2
Arrange the sweet potato slices on a baking sheet and drizzle with the olive oil and sprinkle with salt.
Step 3
Roast them for 10 minutes before flipping and roasting on the other side for 5 minutes.
Step 4
After the 15 minutes is up, spoon about 1-2 teaspoons of sauce on each round and top with mozzarella cheese.
Step 5
Slide the baking sheet back into the oven and bake for an additional 5 minutes, or until the cheese melts.
Step 6
Top with basil and or herbs and serve!
