Ingredients
4 servings

2 tablespoonsextra virgin olive oil

2 cupsbutternut squash
cubed

1yellow onion
chopped

16 ozsausage
cut in rounds

3garlic cloves
minced

2 tablespoonschili powder

4 teaspoonscumin

½ teaspoonchipotle chili powder

¼ teaspoonsea salt

2 ½ cupswater
1 x 15 ozcan can black beans
drained and rinsed
14 ozcan fire roasted peppers
or tomatoes, coarsely chopped
Instructions
Step 1
Heat the oil in a large pot over medium-high heat.
Step 2
Add butternut squash, onion, and sausage, stirring often.
Step 3
Cook until onion begins to soften and things begin to brown, about 5 – 8 minutes.
Step 4
Add garlic, chili powder, cumin, chipotle, salt, and water.
Step 5
Bring to a simmer.
Step 6
Reduce heat to maintain a gentle simmer. Cook until the butternut squash is tender, about 10 minutes.
Step 7
Add beans and peppers and keep at a simmer until slightly reduced.
Step 8
Top with shredded cheddar, avocado, sour cream, and/or cilantro!
