Easy Beef Kabsa
Comforting meal made with warm rice, cubed veggies, cooked beef shanks in one pot then topped with toasted almonds 👌🏻 This is the simple version of Kabsi compared to others I make that require more steps!

Ingredients

2 lbBeef shanks
or lamb

¼ cupolive oil
extra virgin

2onions
medium

4carrots
cubed

1tomato
large, largely cubed

1 tablespoonginger
paste or freshly gra ted / minced

1 tablespoongarlic

3 tablespoonskabsa seasoning mix
spice

2 cupsbasmati rice

3 ½ cupsmeat broth

2 tablespoonssalt

1 cupalmonds
slivered, and or raw cashews

3 tablespoonsolive oil
Instructions
Step 1
Place the beef shanks in pressure cooker for 1 hour. Remove the meat and gently piece each chunk using your hands into the size you desire.
Step 2
Sift the meat broth to clean from any gunk
Step 3
Meanwhile wash and drain your rice until the water runs clear
Step 4
In a medium pot add 1/4 cup oil on high heat. Saute’ the cubed onions and carrots for 5-7 minutes. Add the ginger and garlic paste and stir for another 2 minutes, or you can use fresh garlic and ginger.
Step 5
Add in the soaked and drained rice, cooked meat chunks, kabsi spice, salt, 3 1/2 cups broth and cubed tomatoes then stir. Allow to boil for 1 minute then cover the pot and lower to simmer for 15 -17 minutes. Allow rice to rest for 10 minutes before serving.
Step 6
Toast the slivered almonds with olive oil until they are golden brown to garnish the rice along with minced parsley
