Easy Beef Kabsa
Comforting meal made with warm rice, cubed veggies, cooked beef shanks in one pot then topped with toasted almonds šš» This is the simple version of Kabsi compared to others I make that require more steps! ā£

Ingredients

2 lbBeef shanks
or lamb
Ā¼ cupolive oil
extra virgin
2onions
medium
4carrots
cubed
1tomato
large, largely cubed
1 tablespoonginger
paste or freshly gra ted / minced
1 tablespoongarlic
3 tablespoonskabsa seasoning mix
spice
2 cupsbasmati rice
3 Ā½ cupsmeat broth
2 tablespoonssalt
1 cupalmonds
slivered, and or raw cashews
3 tablespoonsolive oil
Instructions
Step 1
Place the beef shanks in pressure cooker for 1 hour. Remove the meat and gently piece each chunk using your hands into the size you desire.
Step 2
Sift the meat broth to clean from any gunk
Step 3
Meanwhile wash and drain your rice until the water runs clear
Step 4
In a medium pot add 1/4 cup oil on high heat. Sauteā the cubed onions and carrots for 5-7 minutes. Add the ginger and garlic paste and stir for another 2 minutes, or you can use fresh garlic and ginger.
Step 5
Add in the soaked and drained rice, cooked meat chunks, kabsi spice, salt, 3 1/2 cups broth and cubed tomatoes then stir. Allow to boil for 1 minute then cover the pot and lower to simmer for 15 -17 minutes. Allow rice to rest for 10 minutes before serving.
Step 6
Toast the slivered almonds with olive oil until they are golden brown to garnish the rice along with minced parsley
