Hungarian Mushroom Soup

Added Greek yogurt instead of sour cream, and some spinach too. Didn't have any wine so used a splash of rice vinegar. Very yummy!

Used a variety of mushrooms (hot pot mix) and gf bisquick mix to thicken recipe.

I think this is my favorite soup ever (and taught me how delicious mushrooms can be). I doubled the mushrooms because I like a hearty soup, and it was well worth it. Next time, I would make some swaps to make it vegan so I can keep this in the rotation despite my shift to a more plant-based diet.
