Keto Taco Casserole

Optional layer of cottage cheese for added protein; tortilla chip layers for non-keto. Used 2 cans of roasted salsa style tomatoes instead of taco seasoning. Added a can of black beans.

Add half cup salsa and half cup cream cheese

The dish was really tasty. We put lettuce, sour cream and for me, Plain Yogurt. I liked that more than sour cream. Hard to leave left-overs.

I'll add some hot green chilies next time.

This was super simple and easy to make! Delicious! Unfortunately I didn’t have diced tomatoes and green onions to top it with 😩 but will definitely have them next time!
