Step 1
Preheat your oven to 375°F.
Step 2
Chop potatoes into 1/2" cubes, dice pepper and onion, and mince garlic.
Step 3
Toss all chopped veggies, garlic, rosemary, and all spices into a large mixing bowl until evenly coated.
Step 4
Heat your cast iron skillet over medium high heat. Once the pan is hot, add the oil. Once the oil is hot, add the potato mixture into your skillet and cook for 3 minutes.
Step 5
Place your cast iron skillet into your preheated oven and bake for 30 minutes stirring every 10 minutes until tender.
Step 6
Create wells in the skillet and crack your eggs into each hole. Bake for an additional 8-10 minutes or until eggs are cooked to desired style.
Step 7
Sprinkle with extra chili powder, drizzle some hot sauce, and garnish with fresh rosemary. Enjoy!
