Cassava Cake with Maple Custard

Ingredients
8 servings

16 ouncesCassava
grated

1 x 13.5 ouncescan coconut milk

14 ouncescan condensed milk
or dulce de leche
2 cupssweetened dried coconut shreds
adjust to your liking

1 teaspoonmaple extract
optional

2egg yolks

7 ouncesdulce de leche

6 ouncesevaporated milk
Instructions
Step 1
Preheat oven to 375F (190C)
Step 2
In a large bowl, mix Cassava Cake ingredients
Step 3
Pour the mixture in a buttered or oiled oven safe baking dish and bake for 60-65 minutes
Step 4
While baking, mix the Custard Topping ingredients until fully blended.
Step 5
After the cake is finished baking, pour the custard mixture over the cake
Step 6
Bake for additional 20-25 min
Step 7
Let cool and cut portions
