Parmesan Chicken Casserole

I changed the way I made it. I diced the chicken up. I made the Parmesan and mayo in bowl added Italian seasoning, garlic, onion powder First sautéed chicken in pan with diced onions. Then added mayo mixture to chicken and added milk to the consistency I wanted. Then mixed mixture to fettuccine noodles. A little dry but good.

I made it just as the recipe states. The finished dish isn't soupy, it's a clump of cooked chicken with the mayo/seasoned spread on top, surrounded by the fat and water that cooked out of the chicken. It's tasty to be sure but could benefit from some additional seasonings. I think it might be better if the chicken were partially cooked before putting it in the baking dish and covering with the mayo mixture. Then it would not come out of the oven so wet. I'll play with it and make it again.

Used Greek yogurt instead of Mayo (egg allergy). Flavor was great! Texture of chicken was off for us. Next time I will try to boil & shred the chicken, then mix with the sauce & noodles. Bake the parmesan on top to melt, like a baked spaghetti dish. My daughter cleverly called this “Chicken spaghetti”

Added fresh parsley, sautéed diced onions , garlic and mushrooms

It was very good! Next time I make it, I'll up the mayo/parm mixture and stir it through out the chicken instead of just having it on top.

This was delicious. I used parsley, fresh garlic minced, onion and paprika. Definitely make again.

Served over rice. Also added paprika. Very good.

The chicken is slightly bland, but not enough to stop making this dish. I spooned the chicken into a bowl and left all them liquid. Then used the liquid to help flavor the angel hair pasta. I also don't use a foot cheese (as I call it), I use pecorino romano instead. Some grated ramano and it's really good. I might throw some basil in the mayoix next time for extra flavor.

I cooked my chicken on the stove 3 min each side and seasoned with cayenne pepper and lemon pepper before transferring to pan and doing the rest. I was hesitant at first thinking the noodles were gonna be bland but after mixing the chicken on top it worked good. I only wished it were creamier so maybe I won't fry chicken before hand next time or use a broth but highly recommend :))
