Instant Pot Mashed Potatoes

The bed of potatoes under the pork chop are the item of the night. Wow! These are easy and tasty!!! Will be using this recipe for all the holiday meals! The number of potatoes needed to make two pounds may be less than 6. In my case I used three large potatoes and that was plenty. You may not need to add back in the full 1/2 cup of broth. We added in the milk and sour cream first and then the broth as needed.

I will always make my mashed potatoes this way. They are delicious.
