6 lbsRoast Beef
olive oil
1 bulbGarlic
sliced
2 Tbspgarlic salt
2 Tbspdried basil
2 Tbspthyme
2 Tbsponion powder
2 tsprosemary
2 Tbspsalt
2 Tbspblack pepper
4 cupswater
4beef bouillon cubes
⅓ cupDales's
1can tomato paste
5sweet yellow onion
medium, quartered
1 lbsalted butter
6bay leaves

Instructions
The Meat
Step 1
Put pressure cooker on saute and heat enough olive oil to cover the bottom of the pot.
Step 2
Saute sliced garlic until golden brown and remove from pot.
Step 3
Mix seasonings. Trim meat and coat in the seasoning.
Step 4
Sear meat in olive oil in the pot on all sides. Remove from pot.
Step 5
Dissolve beef bouillon cubes in 4 cups water and add to pot.
Step 6
Add Dale's seasoning, any remaining dry seasonings, tomato paste and sautéed garlic to broth.
Step 7
Return meet to pot and add onions, butter, 1 stalk of celery, and bay leaves.
Step 8
Lock lid and close steam valve. Pressure cook on meat setting for 1 hr.
Step 9
Flip the steam release valve open and allow to de-pressurize.
The Vegetables
Step 10
Add potatoes, carrots, & celery. Lock lid, close steam valve, and cook on vegetable setting for 4 minutes.
Step 11
Flip the steam valve and allow to de-pressurize.
Step 12
Remove meat and vegetables into serving dish.
The Gravy
Step 13
Disslove corn starch in water and whisk into broth. Allow to come to a boil then transfer into serving dish.
