Instant Pot Potato Leek Soup

We LOVED it! I tweaked it a bit only because I had stuff in my fridge to use up. I added 1/4 of a green cabbage chopped and a tablespoon or two of vegetable oil to the leeks, butter and garlic while sautéing and before adding the chicken broth. After pressure cooking everything, I added another 1/2 cup of chicken broth and about 1/2 cup of whipping cream before mixing with my hand bender. All it needed in the end was another sprinkle of salt and it was amazing!! Sorry, no picture, we ate it with a loaf of Asiago/parmesan bread we bought at a farmers market. Delicious!!

Adding celery and white beans to make it a little more nutrient dense and add protein. I will update when I make it to let you know if it was a success. *EDIT* Added the white beans and celery and it made it quite a bit thinner and the white beans could definitely be tasted. I would say that it became something other than Leek and Potato soup. wold probably have a lower ratio of beans in the future and add more garlic
