Chicken Enchilada Casserole

Easy, comforting, filling. Good one for when you don't feel like cooking too much but still want something homemade. I added a ~15oz can of corn since my store doesn't sell smaller ones and would do it again for convenience, it wasn't too much corn at all. Next time I might try frying the tortillas a bit to add some crunch, and it would be good with sour cream as a topping too.

Double enchilada sauce

Could add seasoning to chicken before putting it in mix. Add sliced olives.

Definitely going to add this to our meal plan more often! Although next time, I'm going to do way less of the red onion but this is one of my favorite meals ever!
