Ingredients
6 servings
2pie crusts
prepared, thawed
flour
for dusting
¼ cupunsweetened apple butter
2 tablespoonswhole grain mustard
2apples
medium, sliced and 1/8 inch thick
3 slicesdeli ham
cut into six pieces
6 tablespoonsfinely shredded gruyere cheese
2 teaspoonsfresh thyme
coarsely chopped, plus more for garnish
¼ teaspoonground pepper
1egg
large
1 tablespoonwater
Instructions
Step 1
1. Preheat oven to 400 degrees. Coat a large baking sheet with cooking spray
Step 2
2. Place one pie crust on a lightly floured surface. Dust with flour and roll into a 12 inch circle. Cut two 6 inch rounds from the crust. Gather the dough scraps into a ball and roll out into a 6 inch round. Repeat with the remaining quest for a total of 6 rounds

3. Combine apple butter and mustard in a small bowl. Spread one tablespoon on each crust, leaving a one inch border
Step 4
4. Arrange apple and ham slices decoratively on top
Step 5
5. Sprinkle each with some gruyere, thyme and pepper
Step 6
6. Fold the sides of the dough up over the edge of the filling and transfer to the prepared pan
Step 7
7. Whisk egg and water in a small bowl and brush the edges with it
Step 8
8. Bake until the apples are tender and the crusts are deep golden brown, about 30 minutes
Step 9
9. Garnished with more time if desired
