Step 1
1. Peel garlic cloves and pull rosemary leaves off the sprigs. Place in small pot

2. Cover with olive oil and place in stove, bring to a simmer and cook for about 1 hour. You can also do this in the oven at 250 for 2 hours but using the stove is more convenient when cooking other dishes in the oven at the same time.

3. Once cooked, remove the garlic then drain the oil of the rosemary, saving the oil for the potatoes as well

4. Mash the garlic into a paste

5. Chop the peeled potatoes into even cubes, place in a large pot, cover with water and bring to a boil. Boil until fork tender then drain
Step 6
6. In a large bowl, combine the potatoes, milk, butter, & garlic and mash.You can also use a stand mixer.

7. Add salt & pepper to your taste

8. Serve with extra butter, parsley, chives or your favorite herbs!
