Instructions

Step 1
Drizzle olive oil over chicken breast and sprinkle generously with Marrakesh za'atar seasoning and a pinch of kosher salt and sesame seeds.
Step 2
Place chicken breast on a wire baking rack and bake at 350 degrees for 30-35 minutes.
Step 3
Add water and juice from one lime to a sauce pan with a pinch of salt and bring to a boil.
Step 4
Add brown rice. Stir and bring to a simmer. Cover with lid.
Step 5
Heat 2 tbsp of olive and saute the spinach until wilted.
Step 6
Slice cooked chicken and place on a bed of rice and spinach.
Step 7
Dollop hummus on top of chicken and drizzle with olive oil and fresh cracker black pepper.
