2 cupslong grain rice

cleaned
1cinnamon stick
4Bay leaves
1onion

Instructions
To boil the chicken:
Step 1
Immerse the chicken in water in a saucepan and put it on a high heat and leave it till show the rancid on top.
Step 2
At this time, heat an equal amount of water in a second saucepan and bring to a boil.
Step 3
When rancid appears on the surface of the water, lift the chicken from the first pot, drain it well and put it in the second saucepan.
Step 4
Add the cinnamon sticks, bay leaves, onion cut into 4 pieces, ground cinnamon, salt and All spice. Leave to cook the chicken.
Step 5
Lift the chicken from the pot when it is done. Remove the cinnamon sticks, bay leaves, and onions, and preserve the broth. Remove the chicken meat from the bone and store the meat in a warm place.
Step 6
Heat the oil in a saucepan, Blend the ground meat, add salt, All spice and cinnamon.
Step 7
Add the washed rice and 4 cups of chicken stock to it.
Step 8
Close the pot and leave it until the broth has dried and the rice is tender. Approx 10 to 15 minutes
To serve:

Place the chicken pieces on top of the rice, garnish it with roasted almonds, pine nuts and chopped parsley.
Step 10
Serve it as a main dish with a side salad such as fattoush, or laban wa khyar. Both are the perfect compliment to the rice.
