Caribbean Coconut Cake | ‘Coconut Toto’

For this recipe I got inspired by ep 16 of Masterchef Australia 2022, when I had to cook with nutmeg and made a “Caribbean inspired plated dessert” (must watch )
Coconut toto is a much simpler version of the previous that celebrates the warm spices of the Caribbean, nutmeg, cinnamon, allspice and ginger combined to create a wonderful aromatic dessert.
Coconut toto can be found in several countries in the Caribbean, there are different versions and names for it but is specially popular in Jamaica 🇯🇲
I’ve been making a variation of this recipe topped with dulce de leche instead of butter cream and having raving feedback, feel free to change it up as you please.

Ingredients
8 servings
150gunsalted butter
100gcaster sugar
80gbrown sugar
150geggs
150gplain flour
2 tspbaking powder
½ tspground allspice
½ tspground nutmeg
½ tspground ginger
½ tspground cinnamon
¼ tspsalt
25mlspiced rum
100mlcoconut milk
50gdesiccated coconut
Citrus buttercream
Toasted coconut
Instructions
Step 1
-Preheat oven to 180C
Step 2
-Line a 20cm square or round bake tin
Step 3
-Cream butter, caster sugar and brown sugar
Step 4
-Add eggs and beat until incorporated
Step 5
-Mix flour, baking powder, salt, and spiced
Step 6
-Mix in flour mixture alternating with coconut milk until incorporated
Step 7
-Add rum and mix
Step 8
-Fold in desiccated coconut, transfer mixture to lined cake tin
Step 9
-Bake for 30-40 min until cooked through
For the citrus buttercream

-Cream butter

For the buttercream

-Add icing sugar continue creaming until light in colour

-Add lemon zest and coconut milk and mix in
For the toasted coconut

-Heat up a pan to medium heat
Step 15
-Add shredded coconut, salt, and sugar, cook, moving continuously to caramelise
Assemble

-Remove from pan and allow to cool down
Step 17
Ice cooled down coconut cake with coconut citrus buttercream and sprinkle toasted coconut on top
