Lemon Curd
Step 1
Grate the zest from half the lemons, then squeeze the juice from the lemons.

In a saucepan, combine the lemon juice, zest, eggs, sugar and butter in pieces. Heat until the mixture thickens.

Separate the whites from the yolks, mix the yolks with the sugar, add the mascarpone and mix well.

Take the zest of the lemons and add it to the yolks, sugar and mascarpone mixture, as well as the juice of 2/3 of the lemons.

Reserve the juice of 1/3 of the lemons in a deep plate

Whip the egg whites very stiffly, gently mix the egg whites with the yolks, sugar, mascarpone and lemon preparation.

Lightly and quickly dip the biscuits in the plate containing the last lemon juice and line the bottom of a mold with it

Pour a layer of mousse, redo a layer of biscuits and finish with the mousse.
