Easy eggless matcha tiramisu

Not the prettiest-looking tiramisu but so moist and yummy. It is easy to make too and I made it without adding eggs or whipped cream. Instead, I used coconut Melona icecream and coconut cream! Don’t worry, you can’t taste the coconut at all.

Ingredients
8 servings
Mousse
2coconut icecream popsicles
melted to room temperature
1 cupcoconut cream
⅓ cupsugar
1 tspvanilla extract
8 ozmascarpone cheese
Finger layers - soaked with matcha and Bailey’s
Instructions
Step 1
Whisk matcha powder with hot water (I used a matcha whisk) then add Baileys and mix well. Set aside to cool.
Step 2
In a mixing bowl, add mascarpone, melted melona, coconut cream, sugar and vanilla extract together and whisk till it thickens
Step 3
Quickly dip lady fingers in matcha and Baileys mixture and add to a bowl of choice (I used Pyrex). Place 1 single layer of lady fingers before adding 1/3 of the mascarpone mixture. Alternate with lady fingers till 3 layers are complete, ending with the mascarpone mixture on top
Step 4
Dust with sifted matcha on top before putting in fridge to refrigerate overnight (or at least 3 hours)
Step 5
Serve chilled and store remaining in fridge up to 1 week
