Breakfast burrito

Looking for not only a healthier option for breakfast but something simple and easy I can make at home and freez for next day eats. ( I don’t like to waste anything so when I’m cooking I use 1 whole bell pepper(med) 1 onions(med) 4 Serrano peppers because I like a lil heat in my food I also come up the full pack of breakfast sausage.

Dice up veggies i rough chop everything you can get fancy if you want

As you are cutting start browning your breakfast sausage I am using jimmy deans regular pork sausage but you can use any breakfast sausage you like. Like I said in my description I cook all the sausage and use what I need for my recipe the rest get re-purposed

Set aside, sausage and clean your pan add vegetables to pan and sweat them (ya can add a bit of salt to help the process along but the sausage has enough sodium in it)

Once your veggies are cooked set aside and start cooking your scramble eggs ( you can use water or milk to fluffy eggs) as you cook them add 1 cup of your cooked sausage and a cup of your vegetable mix to the pan)

I keep my tortillas in the refrigerator so your going to have to warm them up a bit to help with rolling them up

Spoon 8 oz of the filling onto the bottom 1/3 of each tortilla and sprinkle with cheese. Roll them up making sure to tuck in your edges ( I need practice 🤣)

Wrap your burritos up in foil and into the freezer they go

Next day pull 1 or all 3 out to heat in pan for yourself and your loved ones warm for 5 mins on each side and enjoy

Freeze: Wrap the burritos in foil or parchment paper. Add to a freezer-safe Ziploc bag or container. Freeze for up to 2 months.

Store: Cover and store in the refrigerator for 3-4 days.

Update: found a easier way to reheat the breakfast burritos if you brown/ cook your burritos and wrap them in foil you can microwave them the next day an save time To Reheat: Place one burrito on a microwave-safe plate or dish and cook for 2 minutes or until heated through. Let rest for 30 seconds before eating.
