Instructions
Step 1
Cut potatoes into large chunks (fours)
Step 2
Add to pot(s) with minimum amount of water (2 cups) -- 4 min
Step 3
Drain potatoes but save some water! (can use the rest in the dinner pot)
Step 4
Remove (most of) the potato skins
Step 5
Add apple cider vinegar, olive oil, salt and pepper
Step 6
Mash with hand blender, adding in potato water until desired consistency
