Instructions

Step 1
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Step 2
In a skillet, water sauté the onion, mushrooms and bell pepper over medium heat until tender – add water as necessary to prevent sticking. Stir in the spinach, parsley and Italian seasoning and continue sautéing for 3 minutes. Remove from heat, drain off any excess liquid, set aside.
Step 3
In a large bowl, using your hands, combine mashed potatoes, potato flour, nutritional yeast, garlic powder and parsley. Then separate your “dough” in 12 equal sized balls. Form six balls into thin patties and place on the parchment lined baking sheet. Put 1-2 tablespoons of the filling into the middle of each patty. From the remaining dough, form six more thin patties and place on top of the filling, pinch sides to seal it.
Step 4
Sprinkle with pepper and optional salt. Bake for 30 min, carefully, turn over, bake another 20-30 min until outside is good and crunchy.
