In 12" skillet, heat oil on med-high. Add chopped bacon and cook until bacon is crisp. Add 1 bunch green onions, sliced, and 1 bag (5oz) baby spinach. Cook 2 min., stirring. Add rice, peas, and salt. Cook 5 min., stirring. Divide among 4 plates; top each with a fried egg.
