15-minute Crispy Potato Hashbrown (Rosti)

Ok I lied, this will probably take closer to 20-25 minutes, but I had to make the title for my video catchy.. haha. Still, this dish is super easy and makes for an amazingly crispy and fluffy potato. It goes well with anything - my personal preference is beef tartare :)

Instructions

Step 1
Peel and grate the potatoes using a box grater and squeeze out the excess liquid with a clean kitchen towel.

In a bowl, add the potatoes, salt, pepper, and half of the ghee and mix to coat the potatoes.

Step 3
In a pan over medium-low, heat 2 tbsp of ghee. Add in the potato mixture, tucking in the sides of the potato.
Step 4
When bottom is golden brown (~7-10 minutes), flip the rosti onto a plate. Add some more ghee into the pan. Transfer rosti back into the pan and brown the other side. Use the rest of the ghee to occasionally baste the sides of the rosti to get better browning.
Step 5
Once crispy on both sides, remove from the pan and enjoy!
