Instructions

Note about focaccia dough

Step 1
Check the Lace Bakes community on Whisk for all of my focaccia recipes (overnight, same-day or sourdough). Or you can use the search function on Whisk and type in ‘Overnight focaccia’, ‘same-day focaccia’ or ‘The Best Sourdough Focaccia’.

Prep toppings + preheat oven

Step 2
As your focaccia dough of choice is nearly finished proofing in its tray, get started on prepping your topping ingredients.
Step 3
Par cook the bacon using whatever method you prefer - in frying pan, on tray in oven or in air fryer. You want the bacon about half way cooked as it will finish crisping up on top of the bread. Note that if you’re in the UK, this recipe uses streaky bacon not back bacon.
Step 4
Shred the cheese and chop your green onions and chives. I used a mixture of white cheddar and Red Leicester cheese but feel free to choose your fave!
Step 5
Preheat oven to 220C/430F. For most ovens, I recommend baking on the lowest rack because it helps the bottom of the bread to crisp up and helps to prevent the top from burning. If your oven is gas and the main heat source comes from the bottom, it is probably a better idea to bake it on the middle to upper racks.

Topping and dimpling the focaccia

Step 6
Drizzle the fully proofed focaccia dough with a bit of extra virgin olive oil. Now sprinkle the green onions, chives, bacon and cheese on top of the dough, reserving about 1/3 of the cheese. Please note the cheese quantity is only a guide - please use more or less if you wish to!
Step 7
Once the toppings are evenly scattered over the dough, run a bit of olive oil over your hands and dimple the toppings into the dough. Some will push in, others will rest on top of the bubbly dough.

Baking the focaccia

Step 8
Place tray into preheated oven and set timer for 15 minutes. After the 15 minutes have passed, remove the tray from the oven and scatter the rest of the cheese over the top. Return to oven for another 8-10 minutes or so.
Step 9
Remove from oven when the bread is a nice golden brown and the additional cheese is starting to crisp up. Let cool and enjoy!
