This recipe tastes like it is a lot of work, but it is simple.
To flatten the chicken, use a meat mallet, rolling pin, or 28 oz can of tomatoes. I know it sounds strange, but it totally works.
This step might take you some extra time the first couple of times you do the recipe. Soon, it will feel natural, and you can do it super quickly.

Step 1
One at a time, place the chicken breast halves between two sheets of heavy-duty plastic wrap or parchment paper. Using a meat mallet, rolling pin, or 28 oz can, pound each chicken breast from the center working outwards until the breast is uniformly 1/4 inch thick. DO NOT skip this step. You need to flatten the breasts to intensify the flavor and decrease the cooking time.
Step 2
For each flattened chicken breast, season with salt and pepper, then cover one side evenly with the mustard.
Step 3
Cook chicken in oil in a large skillet over medium heat, 5 min on each side. Remove chicken from pan, place on a rimmed serving platter, and cover to keep warm. Leave the chicken drippings in the pan.
Step 4
Into the skillet, add cream, wine, 2 tsp mustard, and capers. Cook over medium heat, stirring constantly until thickened. Use the wooden spoon or heat-safe spatula to scrape up any browned bits from the bottom of the skillet. These bits will enhance the flavor of the sauce. Pour over chicken breasts,
