Baked Eggplant/ Tortang Talong

This recipe is based off of a Filipino egg dish called Tortang Talong which is usually fried in egg in lots of oil. This is my healthier version and some different spices added to make it delicious

Instructions

Step 1
Wash long eggplant then put in a baking dish and bake at 200c /400 f fan setting for 20 minutes . Once cooked let cool a few minutes then carefully remove the skins letting the heads stil on. Lightly oil the baking dish and put the eggplants in the dish

Mash the eggplant flesh carefully with a fork then season with salt and white pepper

Step 3
Beat eggs with salt white pepper Chinese five spice toasted sesame oil soy sauce and Korean pepper flakes until mixed then pour over the eggplants . Mash the egg mixture into the eggs then Add a handful of chopped coriander/cilantro then bake for 20 more minutes at 200 c/400f fan setting . Once cooked serve with more coriander and some sriracha or hot sauce of your choice
