Instructions

Step 1
In a bowl add chickpea flour season with salt and pepper then add cumin garam masala turmeric chili powder mustard seeds grated ginger and garlic a sliced green chilli chopped mint and coriander . Whisk together to combine

Step 2
Slowly add the cold water until a thick batter is formed then add sliced onions and give it a good mix

Drop heaped tablespoons into hot oil about 170 c / 340 f and fry about 6 minutes until golden and crisp then drain on paper towels . To air fry out in a preheated air fryer 200 c / 490 f for about 8 minutes . Serve with sauce of choice I serve with a cucumber mint Raita which is just yogurt grated cucumber chopped mint coriander chili and salt . Enjoy
