Chorizo and chickpea stew

Ingredients
4 servings

veg oil

400gchorizo
in 1cm chunks

2onions
finely diced
1long red pepper
chopped into small chunks

1clove garlic
crushed

2 teaspoonssweet smoked paprika

2 x 400gchopped tomatoes

2 x 400gcans chickpeas
Instructions
Step 1
Fry chorizo in a splash of oil then set aside
Step 2
Fry onions and pepper 10 minutes until soft.
Step 3
Add garlic and paprika. Cook 2 minutes.
Step 4
Add tomatoes and hot water to loosen
Step 5
Bring to simmer. Cook with partial lid 15 minutes
Step 6
Add chickpeas and return chorizo to pan. Top with coriander. Serve with bread.
