This soup is so delicious and hearty my kids love it. Soups are a great way to get your kids to eat more vegetables you can add any veggies you want or have in the house and it tastes amazing.

Ingredients

1 tablespoonolive oil

2 tablespoonsunsalted butter

1onion
small, diced

2carrots
peeled and diced

2 stalkscelery
diced

2cloves of garlic

1zucchini
diced

1 x 14 ozcan of diced tomatoes

1 x 14 ozcan of red kidney beans

1 x 28 ozcan of crushed tomatoes

1 cupwater

1 tablespoonsalt

1 tablespoondried basil

1 teaspoondried rosemary

½ teaspoonred chili flakes

1 teaspoonblack pepper

1 x 32 ozchicken broth
or vegetable

4 cupscheese Tortellini

8 ozspinach
Instructions
Step 1
1. Put a pot on the stove add the olive oil and butter once the butter melts add in the onion, celery, carrots, garlic and let that cook for about five minutes
Step 2
2. Then add in the zucchini, tomatoes, the beans, crushed tomatoes, water Rinse the crushed tomatoes can with, then add in the seasonings the chicken broth and give it a good mix cover and let it cook for 15 minutes.
Step 3
3. After about 15 minutes uncover add in the tortellini give it a good mix again, cover again and cook for five minutes until the tortellini is cooked they will float to the top
Step 4
4. Lastly mix in the spinach and enjoy some delicious tortellini soup.
