K&W’s Southern Chocolate Pie

The K&W Cafeteria is a staple establishment in North Carolina and Virginia, and they serve some of the best Southern food. This is my copycat recipe for their Southern Chocolate Pie.

Ingredients

4 tablespoonscocoa
¾ cupssugar
5 tablespoonsall-purpose flour
¼ teaspoonsalt
2egg yolks
lightly beaten
1 ½ cupswhole milk
½ teaspoonvanilla
1 tablespoonbutter
1frozen pie crust

Homemade Whipped Cream
Instructions
Step 1
Preheat the oven to 350° F.
Step 2
Using a fork, poke holes in the piecrust with a fork. Place parchment paper of the pie crust and weigh down the parchment paper with pie weights or dried beans.
Step 3
Bake for 15-20 minutes until the pie crust is light brown. Remove from the oven and set aside.
Step 4
In a large saucepan, whisk together the cocoa, sugar, flour, salt, egg yolks, and milk.
Step 5
On medium heat, cook while stirring until the pie filling thickens, about 10 to 12 minutes.
Step 6
Remove the chocolate filling from the heat and stir in the vanilla and butter.
Step 7
Full the pre-baked pie crust with the pie filling.

Top with homemade whipped cream and chocolate shavings
Homemade Whipped Cream
Step 9
1. Place the bowl of a standing mixer into the refrigerator to chill for at least 15-30 minutes (or longer).
Step 10
2. Add cold whipping cream, powdered sugar and vanilla extract to the chilled bowl of a standing mixer (or chilled mixing bowl).

3. Use the wire whisk attachment to a standing mixer, or a hand-held mixer, and beat the ingredients together, starting on low speed and increasing to high slowly as it begins to firm up.

4. Beat for 60-90 seconds until stiff peaks form. Stopping once halfway through to scrape down the sides of the bowl.

5. Transfer mixture to a piping tool to pipe whipped cream along the edge of the pie.
