Where I show you foods that traditionally don't use animal products This is a traditional Armenian appetizer that is naturally vegan. It is a chickpea and potato ball stuffed with onions, tahini, pine nuts, currants and different spices. It is incredible! Especially the filling, I was eating it by the spoonful!

Instructions

Step 1
Heat up olive oil in a pan. Add sliced onions, a pinch of salt and let them cook until golden brown.
Step 2
In the meantime, boil the potato cut into chunks for about 10 minutes or until soft.
Step 3
In a food processor blend the chickpeas with tahini, salt, sugar and cinnamon into a paste. Transfer the mixture to a bowl and add the potatoes and mash everything with a potato masher or your hands.
Step 4
When the onions are cooked, them them off the heat and add tahini, salt and pepper, paprika, sugar, cinnamon, pine nuts and currants.
Step 5
Take some cling film and place some of the paste on it, cover with more cling film and flatten it out to a thin circular shape. Remove the top layer of cling film, add the filling in the middle and then fold all the sides on the filling, helping yourself with the cling film. Then lift all the corners to close the dough and twist the cling film at the top to seal it. Repeat for the rest.
Step 6
Place in the fridge to harden, take remove the cling film and place on a plate, drizzle with olive oil and sprinkle some cinnamon.
