Cream Cheese & Mango Stuffed Pork Tenderloin

A delicious mixture of cream cheese and mango stuffed inside a pork tenderloin. The tenderloin is grilled to perfection leaving a sweet and creamy meat dish unlike any other. This recipe is easy to make and is a perfect summer grilling recipe.

Instructions
Prepare the Pork Tenderloin
Step 1
Pat dry the pork tenderloin and set aside while making the stuffing.
Step 2
Combine the mango, red onion, and garlic in a small mixing bowl.
Step 3
Butterfly the Pork Tenderloin: With a sharp knife, cut down the length of the tenderloin, in the middle of the meat. Keep the knife parallel to the cutting board and leave about a ½ on the opposite length of the tenderloin. When done, the tenderloin should open like a book.Tip: Make a series of small cuts into the pork tenderloin as if you're filleting a fish.
Step 4
Open the tenderloin on a cutting board and cover with plastic wrap. Using a mallet, pound the tenderloin to make it thinner and wider than it was originally. Aim for about a ½ inch thickness while ensuring it is even throughout.
Step 5
Season the pork tenderloin with salt and pepper on both sides.
Step 6
Using a spoon add the cream cheese stuffing into the pork tenderloin. Add it all along the middle, but don't mound it up as the tenderloin is going to be rolled closed.
Step 7
Roll the pork tenderloin closed and secure with 2-3 strands of butchers twine, to stop it from unrolling.
Grill the Pork Tenderloin

Preheat your grill so that one side is hot (450-500 °F) and the other is on low heat.
Step 9
Once hot, add the pork tenderloin to the hot side and sear for three minutes. Flip and sear the other side for three minutes.TIP: Sear the sides of the tenderloin so that you're not placing the seam facing down on the grill.
Step 10
Once seared, transfer the pork tenderloin to the low heat side of the grill and reduce the heat on the opposite side to medium-high. Cook here until the internal temperature reaches 145℉, for about 10 minutes.
Step 11
When the internal temperature is reached, transfer to a plate and tent with foil. Let the pork rest for 5 to 10 minutes.
Step 12
Top with chimichurri sauce (optional) and slice into 1 inch thick slices. Serve and enjoy!
