Melty Sweet Potato Rounds with Honeyed Tahini
The secret to getting melty-tender sweet potatoes? First, cover tightly with foil and roast them so the steam will work its magic to soften the potatoes' insides. Then uncover them and roast until nicely browned, concentrating and intensifying their natural flavors. As soon as they come out of the oven, hit the sweet potatoes with the magical honeyed tahini and some toasted sesame seeds. Then pass them around on a platter for everyone to eat with their fingers and watch them disappear! (If by chance you don't use all the honeyed tahini, it's extra indulgent when smeared on your breakfast toast-you may just ditch PB&J forever. And if you don't have leftover honeyed tahini, you may want to consider doubling it next time!)

Step 1
1. Position a rack in the center of the oven. Preheat the oven to 425°F. Line a 13 × 9 × 1-inch sheet pan with foil and brush generously with olive oil.

2. Arrange the sweet potato rounds in the pan in a single layer. Generously brush the tops of the rounds with olive oil and season with a big pinch of salt (about ½ teaspoon).
Cover the pan tightly with another piece of foil.

3. Roast the potatoes for 30 minutes, then remove the top foil and discard. Return the potatoes to the oven and roast for another 15 to 20 minutes, until the bottoms turn golden brown. Carefully flip the rounds over to roast on the other side for an additional 10 minutes or so. When finished, the potatoes should be melty-tender and charred nicely on both sides. Let the sweet potatoes cool briefly for 5 minutes.

4. In a small bowl, combine the tahini and honey and stir well. If the mixture is thick, warm it up for a few seconds in the microwave. You want it to be runny enough to drizzle over the potatoes.)

5. Using a spatula, transfer the sweet potato rounds to a serving platter. Drizzle the honeyed tahini over the sweet potatoes and top with a generous sprinkle of sesame seeds.
Serve immediately.
