Creamy Chicken, Bacon & Mushroom Stew with Crushed Potatoes

Instructions
Step 1
Heat a large frying pan with a drizzle of vegetable oil. Add the chicken and bacon lardons with a pinch of salt. Cook for 2-3 minutes or until the chicken is browned.
Step 2
Add the potatoes to a heat proof bowl and cover in cling film. Pierce a couple of times and put the bowl in the microwave for 4-5 minutes or until the potatoes are fork tender.
Step 3
Add mushrooms in the pan and cook for 4-5 minutes. In a separate pan, fry the broccoli with butter, salt, pepper, and garlic. Cover.
Step 4
Add onion marmalade, soft cheese, cornflour, chicken stock cube, and 100ml boiled water to the main pan. Stir everything and cook for a further 1-2 minutes or until the sauce is starting to thicken.
Step 5
Add a drizzle of olive oil to the potatoes with salt and pepper. Crush with a fork.
Step 6
Garnish stew with parsley and black pepper.
