Ingredients
8 servings
1 pounddry rotini pasta
8 ouncessharp white cheddar cheese
sliced into cubes
2 cupsdill pickles
diced, plus more for topping
1 tablespoonfresh dill
chopped, plus more for topping
1 tablespoonfresh chives
chopped, plus more for topping
¾ cupmayonnaise
store-bought or homemade
½ cupsour cream
⅔ cuppickle juice
from the pickle jar
0.5white onion
minced
2cloves garlic
minced
½ teaspoonkosher salt
¼ teaspoonground black pepper
Instructions
Step 1
Cook the pasta to al dente according to the package directions.
Step 2
Drain the pasta and let it cool completely.
Step 3
Add the pasta, cheese cubes, diced dill pickles, dill, and chives to a large salad bowl.
Step 4
In a separate dish, whisk the mayonnaise, sour cream, pickle juice, onion, garlic, salt, and black pepper together.
Step 5
Toss the dressing and salad ingredients together until combined.
Step 6
Refrigerate for at least one hour before serving.
Step 7
Toss the salad with an additional ¼-½ cup pickle juice if desired.
Step 8
Top the salad with extra pickles, dill, and chives.
