Instructions

Step 1
Combine flour, half of the sugar, half of the cinnamon, water, active starter, and salt. The dough will be very sticky.
Step 2
Cover with a damp cloth for 1h, and do the first set of stretch and folds.
Step 3
Cover for 4-6h.
Step 4
Make the filling by putting the butter, half the sugar, half the cinnamon, and the apples (with skin removed) on a stovetop and cooking until soft.

Stretch out the dough, and place the filling on top (don't use a rolling pin). Roll the dough with filling like a cinnamon roll, and place it in a loaf pan.

Leave it covered with Saran wrap overnight, up to 2 days.
Step 7
Bake at 400°f or 205°c on the lowest rack, until the internal temperature reaches 195°f or 90°c.
