Instructions

Step 1
1. Add chopped onion, carrots, and butter to instant pot.Turn on to sauté mode and cook stirring frequently, scraping bottom to remove any stuck-on bits till onions are clear.
Step 2
2. Add chicken breasts, chicken broth, rice and seasoning packet and stir well. Set on manual high pressure to cook for 8 minutes. Once it is done cooking, let the pressure release naturally for 5 minutes, then quick release any remaining pressure.
Step 3
3. Remove chicken and chop. Add it back to the soup with heavy cream and salt.
