Chili Dog Casserole

This is an adaptation of an old recipe from my Great Aunt's day called Pecos Pasta. Kid's loved it!

Instructions

Step 1
Heat a large pot of salted water to a boil, pour in macaroni and cook until al dente

Meanwhile, melt the butter in a large skillet and saute onion and bell pepper (I like them to be browned a little, but you can cook until your liking).

Cook hot dogs in the oven or on a grill to your liking.

Add both cans of chili to the skillet and simmer for about 5 minutes. (I used 2 different types of Stagg Chili, but you can use whatever you want).

Cut up hot dogs and add to chili mixture.

Add in the macaroni and stir well to combine. Add salt and pepper to taste, then sprinkle the cup of cheese (or more!) on top; cover and let simmer for 5 more minutes.
